A totally new dining experience opens this evening (Thursday 17 June), as chef Chris Loyne brings his interactive dining experience within four walls.
With only 12 dining spaces a night, and the full personal attention of the chef, Flavour will be an unexpected find on the road to Urgha in North Harris.
The pop-up restaurant in one of North Harris Trust’s eco-friendly business units is a natural next step for Chris and his partner Nicola, who have already provided site-specific dining experiences, catering for events and a chocolate shop in Harris.
Before settling on the Isle of Harris, Chris spent nine years as a chef around the world. After an HND in professional cookery at City of Glasgow College he moved to Enterkine House in Ayrshire as sous-chef to Paul Moffat.
Later he worked around Australia, his first head chef position far north of the Great Barrier Reef on Thursday Island. Back in Scotland he was an agency chef with high-end contracts including catering on the film set for the TV series Outlander.
Partner Nicola has 10 years’ experience working in the hospitality industry as well as being a qualified early years practitioner with her own childminding business three days a week. The other half of the week she is making chocolates or washing dishes, but now, Nicola will host guests on three evenings of each week as Chris takes them on a culinary journey.
He’s spending today in preparation for the first guests, who will hear him lovingly describe how he has sourced, grown, prepared, cooked and presented each dish in an eight-course tasting menu.
Nicola said today: “It’s not been easy organising a restaurant opening from scratch during a pandemic. From ordering all of our equipment online, to getting all the work done, with a toddler and being pregnant, I've not been much help to Chris.
“But all of our hard work is paying off and our visions are coming together nicely. We can't wait to share our interactive dining experience with you all. Good luck to Chris and our Flavour team this evening.”
